Craig Squire, chef for over 34 years is a food artist who, with his team of creative chefs, creates amazing looking dishes utilising Australian Native Produce. Wattle seed, Lemon Myrtle, Davidson Plums, Kakadu Plums, Wild Limes and much more. 

Fresh locally grown and caught products, Tableland meats, fresh seafood and game meats all blended together to create beautiful art.

Craig has travelled the world as guest chef showcasing his culinary craftsmanship. Groups may arrange a tutorial session with him where you can experience the flavours of Australia.

You can experience his amazing food creations at Ochre on the waterfront at Harbour Lights.
